Shan Noddle Salad 

It is really delicious. Shan Noodle is originally come from Shan State which is the eastern part of Myanmar. Shan Noodle cooking is simple, just mix together boiled noodle, chicken curry, tomato paste, peanuts and spring onion and eat! Usually serve with vegetable pickles and fried pork rips.


Ingredients
Chicken - 1/2 chicken
Onion -3
Garlic - 2
Tomato - 500 g
Red chilli powder - 1 tablespoon
Ginger - 1/4 cup
Chicken Powder - 2 teaspoon
Suger - 2 teaspoon
Tumeric - a little
Rosated Peanut -1 teaspoon
Coriander, leck root, leek - a few
Soy sauce - a few
Shan rice noodle - 1 (package)

The following is the instruction of how to cook step by step in English
  1. Soak noodles in cold water for 30 minutes before boiling.
  2. Leave chicken bones out and chop only meats into chunks. Season those chunks with salt, 1 teaspoon of chicken powder, turmeric powder, ginger residue, and 1 teaspoon of sugar. For the soup, boil chicken bones with salt and chicken powder in large amount of water.
  3. Boil tomatoes and peel them. Crush them for tomato paste.
  4. Pound 3 onions, 1 garlic and red chilli powder together. Panfry them for curry paste and leave half of them out for tomato paste.
  5. Add chicken to curry paste and, then add Shout-Pa-Kaw powder. Cook it until the chicken is medium cooked and add half a litre of water. When curry becomes rich, you may improve it by adding either salt or chicken powder before getting it off from the stove. Put it into one bowl.
  6. Use remaining curry paste and boil it with tomatoes for the paste. Boil it until tomato paste becomes rich creamy. You may decide the degree of sourness and improve it by adding more tomatoes. When the paste is ready, put it in one bowl.
  7. Panfry 1 garlic and soak it in oil in a small bowl. Crush roasted peanuts. Cook red chilli powder using 2 teaspoons of oil. Rinse and chop Allium Hookeri, coriander and leek and put them into one plate.
  8. Cook noodles in boiling water until they are soft and sieve them from water. Let noodles cool down.
  9. Soak noodles for 1 serving in hot water and take it out. Put noodles in one plate and add chicken, crushed roasted peanut, tomato paste, cooked chilli powder, fried oily garlics and soy sauce. You may add coriander and leek as much as you want. Mix everything and you may like to eat it with Allium Hookeri, special Shan pickle and chicken bone soup.
