Peppered River Catfish Curry 

Because of less bony and easy to eat, river catfish is favor to who donít want to mess around to fillet with bones. River catfish curry is season with onion leaves and pepper to get special flavor.


Ingredients
River Catfish - 250 g
Leek - a few
Oyster sauce - 1 tablespoon
Thick Soy Sauce - 1 tablespoon
Chicken Powder - 2 teaspoon
Pepper - 2 teaspoon
Chicken Powder - a little
Oil - 2 tablespoon

The following is the instruction of how to cook step by step in English
  1. In order to cleanse fish, rub it with vinegar and rinse it. Then season it with 1 spoon of chicken powder.
  2. Rinse and chop leek.
  3. Heat oil to deep-fry fish and when it's read, fry fish in it until it turns brownish colour. Sieve oil out from fish afterward.
  4. For curry paste, take out the remaining oil from pan and place oyster sauce, soy sauce, chicken powder and leek instead. Let them boil and on side note, you may add more chicken powder for rich flavour.
  5. Put fried fish in a plate for plating and sprinkle pepper on top. Lastly, pour the curry paste on it.
