Chicken and Mushroom Soup 

Even though this is a simple mushroom soup, Mon traditional cooking style definitely different from normal soup. Dried marian fruid is used in Mon traditional dish to get special flavor. This soup have strong taste with chilli and tasty to serve in raining season and even to ill people.


Ingredients
Chicken leg - 500 g
Paddy straw - 300 g
Onion - 2
Parsley - some
Green chilli - 10
Lemon grass - 1
Dried marian fruid - 5
Fish sauce - 2 tablespoon
Preserved fish paste - a little
Salt - 1 teaspoon
Pepper (optional) - a little

The following is the instruction of how to cook step by step in English
  1. Rinse mushrooms and half them. Remove skin from chicken legs and rinse the meat. Get other ingredients ready as shown in the picture.
  2. Put 1 litre of water in a pot together with lemon grass and coriander root. When it is boiling, put chicken and boil it for 10 more minutes.
  3. When chicken is cooked, shred it into small pieces without bone.
  4. Put mushrooms into chicken soup and boil it for 10 minutes.
  5. When mushrooms are cooked, add chicken, dried marian fruit, green chilli, salt, chicken powder, preserved fish paste, and fish sauce. Boil it for 3 minutes.
  6. Lastly, top it with coriander and onions for serving.
