Garnished with Poppy Seeds (Myanmar Pan Cake) 

This circular snack may look like pancake. But it is not. This snack can be found in every bazaar in Myanmar. With a golden brown color, you will find special sweeten taste of palm jiggery with in this snack.


Ingredients
Quality rice - 2 cup
Ordinary rice - 1 cup
Green Gram - 80 g
Baking soda - 1/2 teaspoon
Palm jiggery - 400 g
Coconut - 1/2
Salt - 1 teaspoon
Peanut - 80 g
Oil or butter -
Egg - 2

The following is the instruction of how to cook step by step in English
  1. Soak quality rice, ordinary rice and green gram separately in water overnight. Blend them separately in a blender next morning and it would give you thick creams.
  2. Leave these 3 kinds of creams to settle for 4 hours. It´s got to be soggy and becoming butters after 4 hours or more. Remove clear residual liquid on the top of their surfaces by using spoon. Be careful not to touch the butters with hands. It can be spoiled for doing so.
  3. Boil palm jaggery and let it cool.
  4. Put all the butters into one container with palm jaggery juice. Add salt and baking soda, and stir thoroughly.
  5. Apply small amount of oil onto all over the surface of baking pan. You may use butter instead of oil.
  6. For garnishing, you must soak peanuts and cut them into thin and long pieces. You may also crush them into a couple of pieces.
  7. Shred coconut and get dry fried sesame seeds ready.
  8. You may use microwave for baking. When you choose to use charcoal stove for baking, you must close the baking pan with the metal lid and put burning charcoal on top. Heat must apply to both bottom and top of the pan.
  9. Heat baking pan from step 5 and put 2 scoops of butter by spreading it onto the pan. If you think the amount of butter is not enough, you may add more butter for quality thickness.
  10. Put peanuts, sesame seeds and coconuts flakes on top. Cover the pan with metal lid. For it to be properly cooked, the flame from charcoals at top must be consistent, not getting put out. Check the texture and apply small amount of oil all over the surface when it is cooked. Use spatulas to flip it and cook the other side. After a minute, it is ready. Lastly, garnish with coconut flakes on top before consumption.
  11. If you prefer the pan cake with eggs, you may use 1 or 2 eggs for this portion of recipe. Crack the eggs in one cup and beat them. Later, add them into butter and go through the same steps from above.
