Bamboo Shoot and Coconut Milk Curry

In the period of the Buddhist lent from full moon day of July to October, this curry is usually server for vegetarian. Grinded peanut fried together with hot chili is nice blend of bamboo shoot with coconut milk curry.


Ingredients

Bamboo shoot -
Chickpeas -
Coconut milk -
Salt -
Chicken powder -
Salt -
Basil -
Water -
The following is the instruction of how to cook step by step in English
  1. Slice bamboo shoots into thin pieces and soak them
  2. Take the shoots out from water and boil them with chickpeas until they are tender.
  3. When bamboo shoots and chickpeas are soften enough, add salt and chicken powder. Open a can of coconut milk and get basil ready.
  4. When broth is fairly boiled and thick, add coconut milk.
  5. Lastly, garnish with basil before consumption.
