Fried Spicy Roselle and Bamboo Shoot

I believe you will not forget the dish when you taste it. Fried spicy roselle and bamboo shoot is one of my favorite dishes. Boiled bamboo shoot is mix and fried together with roselle leave and fish paste is also main ingredient to balance the flavor. Check out this easy cook dish and do not forget to make it at home.


Roselle - 2 bundle
Bamboo shoot - 160 g
Chilli paste - 1 tablespoon
Onion - 2
Garlic - a few
Preserved fish paste - 1 teaspoon
Green chilli - 5
The following is the instruction of how to cook step by step in English
  1. Recommend to use wilted Roselle leaves. Rinse the leaves.
  2. Mix the leaves with salt and rinse them again. Squeeze water out from the leaves. In this way, sourness of the leaves is less concentrated. 
  3. Some bamboo shoots are coloured and it is the best to use organic ones. So please be careful when you buy them. Leave bamboo shoots in hot water for a few minutes. Then drain water out by using a sieve.
  4. Crush onions and make a mixture by adding the preserved fish paste with small amount of water.
  5. Add onions and chilli paste into boiling oil and fry.
  6. When it starts to sizzle and nice aroma arises,  add Roselle leaves and stir until they become tender.
  7. Add bamboo shoots and the mixture of fish paste. Stir thoroughly and fry.
  8. Add more small amount of water to soften the bamboo shoots. Close the lid and leave it for awhile. Put green chilli lastly and stir.

Some like to add dried prawns and others add fried pork skin.
You may like to have it mixed with rice and having fresh cucumber slices as a side dish.
