Rice Noodle Salad

In Mandalay, Rice noodle salad, “Nanlat Thote” ,is a very popular breakfast food. Three size of noodles are used in this salad; small, medium or big. Now I am using middle size noodle in this article. Gravy which includes oil, chili powder and onion mix with meat is the main ingredient of this salad. Fish ball can use instead of meat.


Rice Noodle - 850 g
Roasted Peanut Powder - 165 g
Tomato - 400 g
Ground featherback ball - 330 g
Egg - 5
Dried crush chilli - 75 g
Onion - 3
Garlic - 3
Coriander - a few
Fish sauce - a few
Lime - 3
Penut Oil - 400 g
The following is the instruction of how to cook step by step in English
  1. First of all, peel garlics and slice them into thin pieces for deep-fry. Heat oil in a pan and, when it becomes hot and starts boiling, add garlics and deep-fry them. When they turn yellow colour, take them out of the pan and put them in one bowl.
  2. Panfry dried crush chillies using same pan and stop cooking when the aroma starts rising.
  3. Boil featherback fish. You may also use other meat balls such as chicken. After fish is cooked, chop it into small pieces.
  4. Boil tomatoes. Peel and crush them after.
  5. Put small amount of oil into a pan and when it becomes hot, add crushed tomatoes. After that, add fish into tomato paste and cook it for 10 minutes.
  6. Boil eggs and soak them in water. After that, slice them into thin pieces.
  7. Slice onions into thin circular pieces.
  8. When all ingredients are ready at last, put rice noodles into one plate. Add tomato paste, pan-fried dried crush chillies, and small amount of fish sauce. Add small amount of roasted peanut powder. You may create the different flavours of salad dressing by adding more or less of those ingredients. Lastly, top it with egg, onions and coriander.
