Pork with Badalkaw 

Although pork is one of popular meat eat in Myanmar, the curry I gonna show you have one very different ingredient that make the curry pop up from other. That ingredient is call Batalkaw. Like ginger or lemon grass, batakaw cannot eat directly but it can change a dish to delicious flavor. Not only you can smell this nish curry from very far, you will notice tasty pork curry different from your home.

Pork - 400 g
Galangal - 1
Pounded Lemon skin - 1 tablespoon
Onion - 2
Garlic - 1
Tumeric - 1 tablespoon
Curry powder - 1 tablespoon
Chilli powder - 2 teaspoon
Salt - a little

The following is the instruction of how to cook step by step in English
  1. Crush the pounded lemon skin.
  2. Rinse and chop pork into the chunks and marinated with salt, turmeric powder, chicken powder and lemon skin.
  3. Crush onions, garlics, and Badalkaw together.
  4. Prepare oil for pan-fry. Fry those crushed ingredients from step 3 with chilli powder when oil starts to boil.
  5. When they becomes softer, add the chunks of pork and stir. When the meat is starting to be medium rare, add more water and heat it until it becomes tender. You may add more water when the meat is not soften enough.
When water is drying up and the paste becomes thick, you fix the flavour by adding either fish sauce or salt. After it has been enhanced to the flavour of your own, it is definitely ready. Enjoy !
